Turkey Wild Rice Soup is the best recipe for chilly Minnesota evenings. This dish is perfect as the main course or a tasty side!
Ingredients
- 1 cup diced sweet onion
- 2 cups sliced carrots
- 1 cup diced celery
- 1 tablespoon minced garlic
- 1 tablespoon butter
- 1 teaspoon salt
- 1 teaspoon pepper
- 5 cups turkey broth
- 1 cup wild rice
- 2–3 cups shredded cooked turkey breast
Directions
- In a large pot over medium heat add butter.
- Once the butter is melted, add vegetables with salt, pepper and one cup of turkey broth. Cook until veggies are softened.
- Then add the garlic, and cook for 5 minutes.
- Add the remaining 4 cups of the turkey broth and rice.
- Bring to a simmer and cover for 30 minutes.
- Add in the turkey and simmer uncovered for another 30 minutes.
