Turkey Pasta Casserole

By using turkey sausage and whole wheat pasta, this casserole is not only delicious, but also healthy. A great dish for any gathering with family and friends.

Ingredients

  • 1 pound turkey sausage
  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 1 green bell pepper, diced
  • 7 large garlic cloves, chopped
  • 1 Tablespoon Italian seasoning
  • 3/4 teaspoon crushed red pepper flakes
  • 1-28 ounce can crushed tomatoes
  • 1 teaspoon coarse salt
  • 1/2 teaspoon black pepper
  • 1/2 cup heavy cream
  • 1 pound whole wheat penne pasta (cooked according to package directions)
  • 4 ounces Havarti cheese, cut into 1/4 inch cubes
  • 2 ounces cheddar cheese, cut into 1/4 inch cubes
  • 1/2 cup shredded parmesan
  • 1/2 cup shredded cheddar

Directions

  1. In a large skillet, cook turkey sausage over medium-high heat, breaking into crumbles, until fully cooked. Remove from skillet.
  2. Add olive oil to skillet. Add onion and green pepper, cook for 5 minutes or until tender. Stir in garlic, Italian seasoning and red pepper flakes. Cook another 2 minutes.
  3. Return sausage to skillet and stir well. Add tomatoes, salt and pepper, mixing well. Bring to a boil, reduce heat and let simmer, uncovered, for 15 minutes.
  4. Add cream to skillet and heat through.
  5. In a large bowl, toss pasta with sauce and add cubed Havarti and cheddar.
  6. Place pasta in a 13X9X2 inch baking dish. Top with shredded parmesan and cheddar.
  7. Bake at 400°F for 15-20 minutes, until cheese is melted on top.
