Turkey and Black Bean Meatloaf

Ingredients

  • 1 lb ground turkey
  • 1 can black beans, rinsed and drained
  • 1/2 cup breadcrumbs
  • 1/4 cup finely chopped onion
  • 1/4 cup ketchup (plus extra for topping)
  • 1 large egg
  • 2 cloves garlic, minced
  • 1 tsp Worcestershire sauce
  • 1 tsp salt
  • 1/2 tsp black pepper
  • Optional: 1/2 tsp smoked paprika for added flavor

Sauce

  • 3/4 cup ketchup
  • 1 tablespoon mustard
  • 1 tablespoon brown sugar
  • 1/4 tsp nutmeg

Directions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, mash the black beans with a fork or potato masher until slightly broken up, but still chunky.
  3. Add ground turkey, breadcrumbs, onion, ketchup, egg, garlic, Worcestershire sauce, salt, pepper, and smoked paprika (if using). Mix until just combined.
  4. Place mixture in a greased loaf pan.
  5. In a separate bowl, combine the sauce ingredients.
  6. Spread the sauce over the top of the loaf.
  7. Bake for 50-60 minutes, or until the internal temperature reaches 165°F (74°C).
  8. Let rest for a few minutes before slicing.
