This hearty meatloaf is a delicious twist on classic comfort food. Combing lean turkey and fiber-rich black beans, this is a satisfying meal that's low fat.
- 1 lb ground turkey
- 1 can black beans, rinsed and drained
- 1/2 cup breadcrumbs
- 1/4 cup finely chopped onion
- 1/4 cup ketchup (plus extra for topping)
- 1 large egg
- 2 cloves garlic, minced
- 1 tsp Worcestershire sauce
- 1 tsp salt
- 1/2 tsp black pepper
- Optional: 1/2 tsp smoked paprika for added flavor
Sauce
- 3/4 cup ketchup
- 1 tablespoon mustard
- 1 tablespoon brown sugar
- 1/4 tsp nutmeg
Directions
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, mash the black beans with a fork or potato masher until slightly broken up, but still chunky.
- Add ground turkey, breadcrumbs, onion, ketchup, egg, garlic, Worcestershire sauce, salt, pepper, and smoked paprika (if using). Mix until just combined.
- Place mixture in a greased loaf pan.
- In a separate bowl, combine the sauce ingredients.
- Spread the sauce over the top of the loaf.
- Bake for 50-60 minutes, or until the internal temperature reaches 165°F (74°C).
- Let rest for a few minutes before slicing.
